    In an oven-safe dish, combine:

    • Garlic cloves

    • Cherry tomatoes

    • Rosemary

    • Olive oil

    • Salt and pepper

Bake for 30–40 minutes, until the tomatoes are soft, lightly caramelized, and full of flavor.

In a food processor, blend together:

    • Basil

    • Pine nuts

    • Parmesan

    • Garlic

    • Salt

Slowly drizzle in the olive oil until smooth.
Add a bit of water if you want a lighter, creamier consistency.
(You can also use a mortar and pestle for a more rustic texture.)

    3. Assemble the Caprese Sandwich

    • Slice the baguette and toast it lightly.

    • Spread a generous layer of pesto on the bottom half.

    • Add fresh arugula for crunch.

    • Slice the burrata and spread it evenly over the greens.

    • Drizzle with chili oil if you like a little heat.

    • Top with spoonfuls of cherry tomato confit.

    • Finish with a drizzle of balsamic glaze.

    • Close the sandwich and serve immediately.

      Tips & Variations

      • Make it vegan: Swap burrata for a creamy vegan mozzarella.

      • Add protein: Grilled chicken or crispy prosciutto works beautifully.

      • Use focaccia or ciabatta: For an even more Italian-style sandwich.

      • Extra pesto? Toss it with pasta or drizzle it over roasted vegetables.
