The Merry Caprese Wreath
Ingredients

1/2 jar store-bought pesto (or homemade)

1 bunch fresh basil (large, bright leaves)

500 g cherry or grape tomatoes

220 g baby bocconcini

Extra-virgin olive oil

Thick, caramelised balsamic glaze

Toasted bread to serve (optional)

Method

Take a large circular platter or plate (mine is 30 cm in diameter). If yours is larger, add more tomatoes and cheese to fill the space.

Spread a ring of pesto around the outer edge of the platter to form the base of the wreath.

Layer basil leaves over the pesto.

Cut half of the cherry tomatoes in half, leaving the rest whole.

Arrange the tomatoes on top of the basil.

Drain and pat dry the bocconcini, then place them on top.

Drizzle with olive oil and balsamic glaze, then season with salt and pepper.

Garnish with a few small basil leaves.
